How come every time i look at pictures of studios there are almost always 2 moniters. Could some one let me know why you would use or need 2. thanks

Well I know a lot of people who like to use two monitors with Pro Tools. One for the mix window and one for the edit window. It could also be that one is for Pro Tools or some other DAW and the other is for the automation on the console.

Because tools, tracks, wave editors, miwer channels, midi data, video all this take some room and if you see everything without closing/moving windows ain't it great! People do so not only because they can, but because they work more comfortably.
