Cubase is sequencing/editing software made by Steinberg

http://www.apple.com/software/pro/logic/ These programs allow you to record and arrange digital audio (samples etc) and combine it with midi controlled software and external instruments and fx to create music. There are a lot of third party plug-ins available to work with these programs. These are called vst instuments or fx for cubase and audio units for Logic. Check kvr-vst.com or
