what happens if you connect a non-phantom powered mic like a Sennheiser 421 to a mixing desk feeding phantom power to it? Will it break?

NO...not at all. Given that you have a good balanced XLR cable there is no problem with that.

this may never be an issue for you, but make sure you NEVER use phantom power on a ribbon mic. instant mic-death.
