Try Computer Music Magazine's Computer Muzys 1.5. If you buy the latest issue you get everything you need. "Free" (mag costs close to 10 bucks) and legit. No OSX version yet. I honestly can't tell you how good it is I only messed around with it for a few hrs. I currently use Cubase SX.

Cubase is sequencing/editing software made by Steinberg
http://www.steinberg.net/en/

Its rivals apple/emagic's Logic. http://www.apple.com/software/pro/logic/ These programs allow you to record and arrange digital audio (samples etc) and combine it with midi controlled software and external instruments and fx to create music. There are a lot of third party plug-ins available to work with these programs. These are called vst instuments or fx for cubase and audio units for Logic. Check kvr-vst.com or http://www.osxaudio.com/ to see some examples.

Also check out Propellerheads Reason 2.0 soon to be 2.5. http://www.propellerheads.se/ This is kind of an all in one software studio with drum machines, synths, sampler and fx. There is a lot more out there. Read about some of the others on Computer Musics site. (fruityloops, acid, cakewalk P5 etc)
