I have seen programs that you can use to make VST instruments for the Windoze platform, but not for Mac. Does anyone know of any (for OSX)?

MAX/MSP from Cycling 74 (http://www.cycling74.com) is one, although it has a fairly steep learning curve. I believe you can make VSTi's in Reaktor as well (http://www.native-instruments.com).
