I've got a 30 minute .aiff and a .cue sheet that will chunk it up on a disk at once burn.

How do I gapless burn an .aiff with a .cue sheet?

I've found a burner that will do it with a .bin and a .cue, but how do I convert a .aiff to a .bin?

Or is there a smarter way? I'm pretty lost.

As you have it in aiff, you can make parts, and burn in toast without gaps.

Else, Toast supports bin/cue, as Nero
