Basic Audio setup, What to get? Options

I am working with a small local studio.
We have a MAC G3, older version of Digital Preformer, mixer, and a bunch of other studio hardware.  Our goal is to be able to digitally record (to the MAC) around 8 tracks at the same time.  What kind of external hard drive setup will we need?  I am guessing a good, fast SCSI drive or two, but I am not sure.  I am not sure what kind of SCSI bus the G3 comes with (SCSI-2, Ultra SCSI, etc.).

Any help would be greatly appreciated.

What model G3 do you have? What kind of soundcard or input device?

As a rule Apple did away with SCSI as its main DATA transfer protocol with the introduction of the G3
It is most likely to have a SCSI card sitting in one of its PCI slots.
(One or two earlier Beige G3 mini towers had a scsi option, but they are rarer than rocking horse do do.)
As such you should be aware that the internal drive is most likely ATA66.

Most fast ATA100 capable drives should manage 32 trcks minimum.
I still use scsi , but its not essential.
As to the SCSI card (if there is one) reply with the make and model or some sort of id codes from the card and i'll try to tell you what its capable of.
Macs that did have scsi generally had a scsi1 (5Mb/sec) 25 pin external buss, and a fast (scsi 2) 10Mb/sec internal Buss.(50 pin)
One or two Av models i believe came with a 50 pin external fast buss instead of the 25 pin scsi 1 buss, but dont hold me to that!.
Later G3's (Blue/white) Are ALL IDE internals, any scsi is on a card!
Depending on the G3 you have, you may simply be able to fit a second drive internally and record your audio to that!
I would recommend A MOTU interface as you are already Using DP,
If its a later machine with FIREWIRE port, The 828 and 8/96 are great, 828 being a personal fave on the cost/performance front.
if not then the good old 2408 is worth a look, it has all the interfacing options you'll ever need, TDIF/ADAT and Analogue, and can also double as a converter for those moments when someone brings in a project on which ever format you dont have!

If your g3 has firewire, and you are already using digital performer, I would suggest the 896 from motu, it will work with DP and it's simply amazing!

For the 2408 go for the MK2, the MK1 has crappy converters.
