Thanks for the suggestions.
Last week I purchased Logic (Apple Pro Training) by Martin Sitter & Robert Brock and it is most excellent. Doesn't have much info regarding ES1, ES2, EVOC20, EXS24 etc but its got me making music in Logic in no time.
