the software doesn't matter as much as the hardware imo.

have you seen the Stanton STR8-80 ? it's <$200us and has a spdif output that would be really handy to use with any soundcard that had spdif.

after that, just record into Peak or whatever daw you're using. I've had good luck doing some sw mastering with T-Racks after recording vinyl as well.
